Dont let smoking scare you. it is a simple and easy and makes delicious meals.
Take our Trietsch farms pasture raised Angus Short Ribs and peel the membrane off the bone side. A fork may help get it started but once you get a grip on it just pull.
Next take some olive oil and rub it all over your ribs. Then coat them with your favorite dry rub or even a steak seasoning
Get your smoker set at around 235. Try and maintain it between 225 and 250 but don’t Freak out if your temp moves all over during the smoking. mine reached 325 at about hour 2. I just turned it down and continued. This is when you can spritz your Short Rib with a half and half Apple cider vinegar and Apple juice mix. I try to spray them down once every 1.5 hours.
While smoking these Ribs I decided to smoke a few eggs also. Typically as low of temp as possible. But this is what I had going and it worked. Smoked the eggs for just over an hour. But we have a better recipe for that.
I smoked 3 short ribs that weighed about 3.5 lbs. each. It took 6 hours. I used a meat thermometer and pulled the ribs when they reached 205 internal temp.
Then they sat for 30 Minutes while making the Mashed potatoes to go as a side.
Very Juicy and tender. Enjoy.
